WFH looks a lot different ever since I discovered the Marzetti® TastefullyDressed™ salad dressings w/ their unique UV-Blocking label and less preservatives, I have been obsessed. This is the new fav salad for my lunchtime break while at home (or at work!). I went to my butcher and got roast pork sliced fresh, and combined it with escarole & baby spinach + my homemade roasted peppers + parm shavings + seeded croutons I made by tossing Italian bread cubes in the Roasted Garlic Rosemary with Olive Oil Vinaigrette & butter in a hot pan until toasted. RECIPE:

1/2 cup escarole

1/2 cup baby spinach

3 slices roast pork

2 tbs shaved parmesan cheese

2 tbs roasted peppers

1 tbs olive oil

Salt & pepper

Fresh basil

Seeded Italian loaf

1 tbs butter

2 tbs + more for greens Marzetti® Tastefully Dressed™ Roasted Garlic Rosemary with Olive Oil Vinaigrette

Roll roast pork and cut into ribbons; toss with Marzetti® Tastefully Dressed™ Roasted Garlic Rosemary with Olive Oil Vinaigrette. Set aside.

Take 1 jar roasted red peppers (or roast your own) and toss with 1 tbs olive oil + salt and pepper + fresh basil to taste. Let marinate while you prepare the other ingredients. You can make ahead and keep in the fridge for several days or up to one week.




In a nonstick skillet, combine 2 tbs Marzetti® Tastefully Dressed™ Roasted Garlic Rosemary with Olive Oil Vinaigrette + 1 tbs butter until melted. Add seeded bread cubes and sauté until toasted on all sides. Remove from pan and let cool.



Add greens to a bowl and top with pork + roasted peppers + parmesan cheese + croutons.
